Cream cheese gives this flan an extra-rich, almost cheesecake-like density while keeping the same glossy caramel every flan is known for. It's a favorite for bakers who want a more indulgent result without changing much about the classic method.

Ingredients

  • 1 cup sugar (for the caramel)
  • 8 oz cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 4 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Make the caramel and coat the flan mold with it.
  3. Blend the cream cheese on its own until completely smooth, with no lumps remaining.
  4. Add the condensed milk, evaporated milk, eggs, and vanilla, and blend well.
  5. Pour the mixture into the prepared mold.
  6. Bake in a water bath for 55–65 minutes, until just set with a slight jiggle in the center.
  7. Cool to room temperature, then refrigerate overnight.
  8. Unmold and serve.

Notes & Tips

Blending the cream cheese by itself first, before adding the other ingredients, is the key to avoiding lumps in the finished custard. This one benefits from a full overnight chill more than most — the extra time helps the denser custard set completely.
